swissbäkers introduced Berliners to Boston eight years ago, but they did not have the technology available to keep up with their guests’ demands. Well… that changed on Tuesday, September 9, 2014, with the installation of the new WP Riehle Linie 2000A Open Kettle Fryer. The fryer was imported from Germany and is the first of its kind to be installed in the United States. This milestone brought Mr. Riehle, grandson of the founder of WP Riehle, to Allston to assist with the installation.

This fryer has increased the quality, consistency, and production time of swissbäkers’ Berliners. The fryer can hold 60 Berliners at once, a huge increase from the 4 Berliners their first fryer held eight years ago. Additionally, swissbäkers was able to reduce the frying time, making their Berliners lighter, tastier, and healthier!
Haven’t tried a Berliner yet? If you aren’t quite sure what a Berliner is, swissbäkers is more than willing to explain. Berliners are comparable to donuts: they are fried batter filled with either raspberry preserves or chocolate (or without filling). Once the dough is fried, the pastry is filled and then topped with powdered sugar. So… what’s the point of eating a Berliner instead of a donut? Eating a Berliner is better for your waistline, for starters! swissbäkers’ Berliners come in at around 160 calories while most donuts will set you back 300 calories or more. This difference comes from their signature butter dough, decreased frying time (thanks to their new WP Riehle Linie 2000A Open Kettle Fryer), and all natural fillings.
